Recipe: Steak and Gorgonzola Sauce

This Gorgonzola sauce is the perfect accompaniment to your favourite steak. You can do this recipe with any kind of steak, but make sure you choose a good quality meat.

You can replace the Gorgonzola with any crumbly blue cheese, such as Roquefort.

Ingredients

  • 2 fillet steaks (21 or 28 day matured)

  • 1 teaspoon butter

  • 1 shallot

  • 125 ml sour cream

  • 80 g Gorgonzola cheese

Method

  • Get the braai ready and then make the sauce.

  • For the sauce, all you need to do is finely chop the shallots and crumble the Gorgonzola into pieces.
  • Melt the butter in the pot.
  • Once melted, throw the shallots in and cook until tender (should take about two minutes).

  • Throw the sour cream and Gorgonzola into the mix and simmer for a few minutes until the cheese has melted, stirring continuously.

  • Once it’s melted, leave it to stand and go and get the steak ready for the braai.
  • METHOD – BRAAI
  • Make sure the coals are really hot and braai on high heat until it’s cooked the way you like it.

  • Now throw the sauce over it and enjoy!
