Butternut Squash makes an easy weeknight or Sunday dinner transformed it into a dish that is worthy of any special occasion, it is a dinner at home with loved ones. 

Butternut is the perfect low-carb meal and you can add plenty of veggies if you wish, meat, and of course, lots of grated cheese.  Here is how to do it perfectly.

  • 500 g minced meat (If you are only making for 2 people, the cooked mince is never wasted, could be used the next day)

  • 2 onions, chopped

  • salt and pepper

  • seasoning of your choice

  • olive oil 

  • 2 cups chicken stock

  • 2 – 4 butternuts, halved

  • 1 cup mixed frozen vegetables of your choice (optional)

  • cilantro or parsley for garnishing 

  • 2 cups grated cheese

Method – BuTTERNUT

  • Slice the butternut that you want to use in halves, clean the inside and place in a saucepan with water and bring to boil on stove and cook for about 30 minutes or when slightly soft ensuring. Do not overcook as it will make it difficult to handle.  
  • Heat your frying pan, add some olive oil and sauté your onions until golden brown.
  •  Remove from pan and set aside. 
  • Brown the mince in the same frying pan, add the onions. Mix well. Add seasoning of your choice and two cups chicken stock.
  •  Cover and simmer for 45 minutes or until the meat is soft and delicious. 
  • Place butternut in oven dish of your choice.  Fill butternut squash boats with beef mixture and top with cheese. Grill until cheese is melted, approximately three minutes.
