When most people think of gem squash they don’t generally think of it as an exciting vegetable.

However, try this Moroccan inspired gem squash recipe for a change.

Ingredients

  • 4 gem squash

  • 250 gram lamb mince (if going for a meatless option, use couscous)

  • 1 Tablespoon cumin

  • 1 Tablespoon smoked paprika

  • 1 Tablespoon ground coriander

  • a bunch of fresh coriander and mint, finely chopped

  • 1 disc of dried feta, crumbed

  • 60 ml lemon juice

Method

  • Preheat the oven to 200°C.
  • Halve each gem squash, remove the seeds and drizzle with a little bit of olive oil on the cut surface.
  • Roast for 20 minutes, cut side down, or until they begin to soften.
  • While your gem squash roasts, prepare your filling.
  • If you are using meat, brown the lamb mince with the spices and a little bit of seasoning. Mix through the fresh herbs and set aside. If you are going veggie, prep the couscous as you normally would and set aside.
  • Once your squash is cooked and your filling is prepped, remove the squash from the oven and spoon out the inside. Mix through your filling, add the fresh herbs and lemon juice and put the mixed filling back into the squash. Turn under the grill and bake for a further 10 minutes, until heated through and until the filling starts to go a little bit crispy on top.
