Marinated mozzarella and basil salad

This combination of creamy mozzarella, juicy sweet tomatoes and aromatic basil is an Italian classic and ideal for light summer meals.

By marinating the mozzarella in oil with the basil for an hour before serving, you’ll enjoy a big flavour boost out of the Mediterranean.

Use the best ingredients you can afford! Try to track down a mix heritage tomatoes from your local farmer’s market or supermarket. The varying levels of sweetness and acidity in these varieties set them apart from the bland, uniformly shaped red tomatoes that now line the shelves of most retailers.

I’ve used white balsamic vinegar, as this doesn’t dis-colour the mozzarella like a regular balsamic.

  • bunch of fresh basil, leaves only

  • 400 g fresh mozzarella

  • 60 ml extra virgin olive oil

  • punnet of heritage cherry tomatoes

  • 2 tablespoons balsamic vinegar (preferable white, but regular will be fine)

  • Seasoning to taste


  • Combine the oil basil in a bowl, add the mozzarella and season to taste with salt and pepper. Cover and leave to marinade for an hour in the refrigerator.
  • Add tomatoes and vinegar to the mozzarella and toss to combine.
  • Check the flavour and season to taste with more salt and pepper if required, and serve immediately.
