This creamy potato soup recipe is a tried-and-tested family favourite. Quick and easy to make, you only need one pot to make several steaming hot bowls packed full of nourishing flavour.

Fresh cream adds a touch of luxury to this potato soup, which goes wonderfully with thick slices of bread. Add vitamins and colour contrast by garnishing with chopped parsley. Make your own dinner rolls and really impress your guests. Simply soup-er!

This hearty and delicious potato soup is a family favourite.

Ingredients

  • 6 medium potatoes, peeled and cubed

  • 1 onion, finely chopped

  • 1 garlic clove, crushed

  • salt

  • freshly ground pepper

  • 1/2 teaspoon dried chili flakes

  • 2 tablespoons chopped fresh parsley

  • 1 litre of hot water

  • 150 ml cream

  • 15 ml butter

  • 1 teaspoon mixed herbs

Method

  • In a 2 litre saucepan, heat the butter. Fry the onions and garlic.
  • Add the cubed potatoes. Season to taste. Add the mixed herbs and chili flakes. Add the hot water. Place a lid on the pot and simmer for 25 minutes.
  • Remove the saucepan from the heat. Decant the soup into a glass blender. Blend the soup until smooth.
  • Pour the hot soup into bowls, add cream and garnish with parsley.
